Until the 1990s, the nut oil producers offering rapeseed oil, mustard oil, and groundnut oil gained dominance in India. The economic and technological changes thereafter incorporated dynamics in the food's consumer demand, that runs inclusive of edible oils.
The possible reasons for the changes are the rise in urbanization that includes changing lifestyles, selling of packet oils in multiple varieties by the mustard oil suppliers, rising household income levels, etc. The results showed that the dominant edible oil that is vastly consumed and in huge demand are sunflower oil, soybean oil, and palm oil.
The rice bran oil wholesalers in India are rising, as there has been an increase of 30% in the past five years. The households that consumed groundnut oil previously have switched to soybean oil, rapeseed/mustard oil, thus implying the requirement for necessary production changes.
The consumption of edible oils is quite high in the western parts of India and comparatively less in the southern parts. Nonetheless, the consumption rate is proportional to the distribution of the population. Comparatively, the coconut oil traders are mostly favoured by the Eastern parts of the country. Whereas, the South Indians have a thing for sunflower oil and they have a lesser liking towards mustard oil and soybean oil.
India is highly dependent on groundnut oil dealers because the country is the largest consumer as well as the producer of edible oils and fats globally. India also takes pride in being the largest edible oil importer.
